Never having all the ingredients to follow a recipe isn't always a bad thing. A few weeks ago I tried following the recipe for Black & White from Vegan Cookies Invade your Cookie Jar by Isa and Terry, but of course I was missing some of the main ingredients, so I improvised. The result? Instead of a flatter, more sturdy cookie, I ended up with a soft, fluffy cookie. Having some ganache on hand I decorated the tops of the cookies with it.
When my boyfriend and housemate tried them, they said they tasted exactly like a snack they used to have when they were kids, called Yo-Yo.
The only difference being that they were filled with a chocolate mousse. So I whipped up some vegan chocolate mousse with some silken tofu, melted chocolate and powdered sugar, put about a spoon full between two cookies, and decorated the top cookies with ganache. I've never had the real Yo-Yo, so I can't comment on the resemblance, but I can tell you that they were mighty tasty!
